On the go healthy breakfast ideas.
I don’t know what happens in your house, but here in my house school mornings are always a mad rush to get out the door. This generally ends up with breakfast taking a backseat to everything else that needs to get done in the morning.
This is never a good choice and it’s one I’m determined to stop making this school year. You see skipping breakfast is a definite no, no when it comes to eating healthy. After all, there’s overwhelming evidence that eating a nutritious breakfast not only gives you the energy to start a new day, but breakfast is linked to many health benefits, including improved concentration and performance in the classroom (or the boardroom), more strength and endurance to engage in physical activity and Lower cholesterol levels.
At the same time, I need quick and easy breakfast ideas that won’t compromise on health. That’s where these healthy breakfast ideas come in: they’re now my go-to list. The best part is that they’re delicious, easy to make, and many of them can be prepped the night before so you can just grab and go.

Breakfast Pizza
What kid wouldn’t love pizza for breakfast! I substitute a whole wheat English muffin for the waffle and add a sliced banana and some blueberries. Easy Peasy!
Scrambled Egg Breakfast Muffins
These scrambled egg muffins from Six Sisters Stuff were such a big hit and so simple to make! I left out the ham as we don’t really eat meat. You really can personalize these to your taste.
Egg Avacado Toast
Honestly our all-time favorite breakfast during avocado season. They actually sell these at our local hipster coffee shop for around $8 each. We make them for under $1. That’s what I call a win, win!

Overnight Oats
A standard but a goodie from Little Broken. I top these oats with a handful of these hemp seeds for extra protein and then add whatever fruit is on hand. Honestly takes 5 minutes. To make it super convenient for on the go, use disposable coffee cups to keep it warm. While I do prefer eco-friendly options, sometimes the ultimate goal is just to get out the door 😉
Breakfast Quesadilla
My kids love quesadillas. These breakfast quesadillas from Well Plated are so perfect. You can make a batch on the weekend and toss them in individual freezer baggies. Then while everyone is getting ready for the day, stick them in the microwave. When you’re ready to leave grab and go!
Berry Simple Smoothie
I love to make a large batch of smoothies and freeze them. My kids love these smoothies from Produce For Kids!
We make smoothies so often I had to find an eco-friendly option to make this grab-and-go. When I found these cups on Amazon I was so excited because they really are perfect.
I freeze the smoothies right in these cups and then in the morning toss them straight into the kids’ backpack or my bag. By nutrition break, they are a perfect consistency. I usually add a scoop of vital proteins for some added protein. It has no flavor and no one knows it’s in there.

Pre-packed Breakfast
An Edible Mosaic put together the ultimate grab-and-go breakfast. This can easily be put together the night before. Heck if you have enough containers you can even put together a whole week’s worth of these.
They do sell compartment containers for this type of meal prep on Amazon. However, a much cheaper option, that works just as well, is these silicone muffin cups. They make an excellent way to separate your food choices.
I like to pre-pack a hard-boiled egg, put some almonds in one cup, some grapes in another, and add some cheese slices or crackers. Several muffin cups will fit in the containers I already own.
Really the possibilities are endless. Basically, you are making your own Snackables for a fraction of the costs. The kids will love it and you know everything is healthy.
Breakfast Sandwiches
The Suburban Soapbox has come up with what I think is a much healthier version of McDonald’s Egg Mc Muffin. So easy to whip up a batch of these and freeze. Pull them out in the morning and pop them in the microwave. To keep the muffins from getting hard, I wrap them in a damp paper towel when I stick them in the microwave.
Apple Sandwiches
My favorite thing about these apple sandwiches from Garnish with Lemon is how fresh and really easy they are to make. It’s as simple as slicing an apple. I use this apple corer and then just slice. I’ll change things up a bit by replacing the granola with these hemp seeds to make them extra nutritious. They are so easy to eat in the car on the go!
Yogurt Parfait
I really love these yogurt and granola parfaits for a quick and healthy on the go breakfast. You can use the same cups that you use for the smoothies to make these the night before.
